If we do not have a salad with dinner, I will cut a couple of cut a couple of avocados, sprinkle with lemon juice then pour a tablespoon of extra good olive oil and then top it with a spoonful of parmesan cheese and have this as a side....my oh my now I will type the recipe for the soup since I have very ripe avocados in the refrigerator..and you have 2 recipes for the price of one ..enjoy both

Stove Top


1 Tbsp
0live oil
leeks..white part and only 1 inch of the green
2 Tbsp
minced garlic
4 c
chicken stock
3 Tbsp
lime juice and zest from 1 lime
1 1/2 Tbsp
wasabi paste//
2 Tbsp
honey mustard
2 Tbsp
chopped tarragon{makes the soup yummy}
salt and white pepper to taste

How to Make Avocado Soup


  • 1Cut the leeks lengthwise and hold leeks under cold running water and wash out any soil which maybe collected inbetween the layers of leek...Add the oil to large pot and when heated add the leeks {which you have dried off} to the pot and saute until leeks are tender.
  • 2Peel and add the course chopped avocado and all the rest of the ingredients to the pot and simmer on low heat for 15 to 30 minutes..remove from stove cool a little and in blender puree the soup until smooth..to serve top with a dollop of cream..yummo
