This is just darned good food. I first read it in Vegan on the Cheap.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 2 - garlic cloves
  • 1/2 teaspoon cumin or basil
  • 2 tablespoons olive oil
  • - salt and pepper
  • 2 tablespoons lemon juice
  • 1 cup milk, or soy milk to make vegan

How To Make almost instant cream of chickpea and tomato soup

  • Step 1
    Process all ingredients in food processor and pour into sauce pan and heat.
