canola oil
2 clove
garlic minced
1 Tbsp
ginger grated
1 small
onion diced
red chilies sliced
1 stalk(s)
lemongrass bruised
kaffir lime leaves broken
14 oz
can coconut milk
2 c
vegetable broth
1/4 c
fish sauce
juice of 1 lime
8 oz
skinless salmon sliced
1 c
each fennel and spinach chopped
carrot thinly sliced
1 stalk(s)
green onion chopped
1/4 c
cilantro chopped

How to Make Thai Salmon Soup


  • 1In a large pot add oil and add the garlic, ginger, onion, chili pepper, lemongrass, and kaffir leaves. Cook on medium heat two minutes to release the flavors.
  • 2Pour in the coconut milk and vegetable broth. Bring to a boil and reduce heat to a simmer and simmer for 15 minutes
  • 3Strain the broth and discard the solids. Place the broth back on stove and add the fennel and fish sauce. Cook 2 minutes. Add the spinach and carrots. Cook 1 minutes. Add the salmon and lime juice. Cook 3 to 4 minutes. Add the cilantro and green onions serve
