Ingredients
- 1 tablespoon canola oil
- 2 cloves garlic minced
- 1 tablespoon ginger grated
- 1 small onion diced
- 4 - red chilies sliced
- 1 stalk lemongrass bruised
- 4 - kaffir lime leaves broken
- 14 ounces can coconut milk
- 2 cups vegetable broth
- 1/4 cup fish sauce
- - juice of 1 lime
- 8 ounces skinless salmon sliced
- 1 cup each fennel and spinach chopped
- 1 - carrot thinly sliced
- 1 stalk green onion chopped
- 1/4 cup cilantro chopped
How To Make thai salmon soup

Step 1In a large pot add oil and add the garlic, ginger, onion, chili pepper, lemongrass, and kaffir leaves. Cook on medium heat two minutes to release the flavors.

Step 2Pour in the coconut milk and vegetable broth. Bring to a boil and reduce heat to a simmer and simmer for 15 minutes

Step 3Strain the broth and discard the solids. Place the broth back on stove and add the fennel and fish sauce. Cook 2 minutes. Add the spinach and carrots. Cook 1 minutes. Add the salmon and lime juice. Cook 3 to 4 minutes. Add the cilantro and green onions serve
