I have not made this soup for several years, I do not remember why. I think it just got pushed around and under something. I think I may have made it so often, we probably got burned out.I made this last week, and now I remember why I made it so many times. We find it fantastic served with the little oyster crackers. At least my family likes them. I want everyone to enjoy this soup.
Saute onions and peppers in butter till tender. Add milk and cream cheese, cook over low heat, stirring till smooth. Add next 4 ingredients, simmer 5-8 minutes, or till edges of oysters curl. Garnish with celery leaves or parsley.
