My friend makes this as a alternative for potatoes..I was a skeptic..but this is the best..haha..hubs dont"t know he is getting veggies...lol

Ingredients

  • 1 - cauliflower..chopped
  • 1 pound bacon
  • 1 large onion
  • 2 cans chopped clams
  • 3 - celery stalks
  • 4 cups chicken broth
  • 1 pint half and half
  • 2 teaspoons old bay seasoning
  • - salt and pepper to taste
  • OPTIONAL
  • 1/2 cup instant mashed potatoes

How To Make cauliclam chowder

  • Step 1
    chop bacon and brown until semi crisp..add chopped onion and celery and brown..set aside
  • Step 2
    chop cauliflower..put in dutch oven or large pan..add chicken broth and cook until cauliflower is tender..
  • Step 3
    combine the bacon and onion celery mix..add cream..simmer on low for 15 minutes..add a half cup of potatoe flakes if you want to thicken it..stir and serve ..
