This recipe is more of a thin potato soup. It is loaded with vegetables.

Ingredients

  • 6 slices bacon, cooked and drained
  • 6 - potatoes, peeled and cubed
  • 1/2 cup onion, grated
  • 2/3 cup carrots, peeled and chopped
  • 1/2 cup celery, diced
  • 1/4 - head of cabbage, chopped
  • 4 cups water
  • - salt & pepper to taste
  • 1 1/2 cups milk
  • 1 - egg, beaten
  • 2 tablespoons flour

How To Make potato soup

  • Step 1
    Combine bacon, potatoes, onion, carrots, celery, cabbage, water, salt & pepper in soup pot. Bring to a boil. Reduce heat and simmer until vegetables are tender.
  • Step 2
    In a small bowl, combine beaten egg and flour. Gradually stir into milk. Gradually add to soup pot.
  • Step 3
    After milk has been added, simmer but DO NOT BOIL.
