Ingredients

potatoes unpeeled, diced
1 medium
onion, diced
2 c
broccoli, chopped
3 c
milk
3 Tbsp
butter, cold
1/3 c
flour
4 c
cheese, shredded

chicken or veggie broth

How to Make Potato Broccoli Bacon Cheddar "Stewp"

Step-by-Step

  • 1Add your spuds, onions and broth to your crock pot and cook on high for 2 hours.
  • 2At the 2 hour mark, add your milk and cook another hour.
  • 3Make a rue in a small saucepan and add to the soup, mixing well. Add your broccoli and lower heat and cook another hour.
  • 4Nuke some turkey or pork bacon, about 6 slices, and break up. Add to the soup and cook another 30 minutes.
  • 5Add the cheese and cook another 30 minutes. Serve with a bread or biscuit and a salad for a very hearty fall dinner.
