This is a thick, creamy and cheesy lovin' kinda soup. If you love your potatoes and cheese then this will be a soup that you enjoy. It's easy to make but you may have to add a little more broth to get to the consistency that you like your soup so have a little extra on hand just in case it's too thick. Taste of Home recipe.

Ingredients
- 1 cup chopped celery
- 1 cup chopped onion
- 1/4 cup butter
- 32 ounces chicken broth, low sodium (1 box)
- 1 1/3 cups mashed potato flakes
- 1 1/2 cups milk
- 1 cup cubed process american cheese (velveeta)
- 1 cup sharp cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- GARNISH
- - sour cream
- - bacon bits
- - chopped celery
How To Make pot o' gold potato soup

Step 1In a 3-qt. saucepan, saute celery and onion in butter for 2-3 minutes.

Step 2stir in broth; bring to boil. Reduce heat. Add potato flakes; cook and stir for 5-7 minutes.

Step 3Add milk, cheese, garlic salt and chili powder. Cook and stir until cheese is melted. Just before serving, add sour cream and heat through (do not boil).
