this comes from my maternal grandmother. I think it came from her "Inglenook"Cookbook.

Ingredients

2 lb
fresh tomatoes
2 tsp
baking powder
2 Tbsp
butter
2 c
whole milk
2 Tbsp
flour
pinch
salt and pepper

How to Make Mimi's Tomato Soup

Step-by-Step

  • 1clean, core and dice whole tomatoes, mash with potato masher, sprinkle with baking soda, cook on low until tomatoes are soft app. 10 min.Press tomatoes through a sieve.
  • 2make a roux with flour and milk. wisk until smooth. Add slowly to the tomatoes. cook over low heat until it begins to thicken.Be careful, and stir often so it doesn't scorch.
  • 3add butter and season with salt & pepper to taste, toward the end of cooking.
