Ingredients
- 2 tablespoons coconut oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper
- 10 roma tomatoes, skinned
- 1 can crushed tomatoes, canned
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 1/2 cups fresh basil
- 1/4 cup cream cheese
- 2 packages dried ranch dressing mix
- salt/pepper to taste
- dried potato flakes, optional
How To Make mimi's creamy tomato basil soup

Step 1Over medium heat, sauté the onions and garlic in the coconut oil until soft. Add the chicken broth, Roma tomatoes, canned tomatoes and simmer on medium heat for 30 minutes, mashing into the fresh tomatoes.

Step 2Stir in the seasonings, ranch dressing, basil and cream cheese until cheese is fully melted. Blend soup to your desired consistency,

Step 3Save the salt/pepper to season last, since some of the ingredients contain salt. Depending on your desired consistency, sprinkle potato flakes to thicken, which I do when feeding small children!
