A delicious twist to the plentiful tomatoes we end up with in our gardens. A recipe to savor, share, freeze and bring to a neighbor!!! Enjoy!!!

Ingredients

  • 12 tablespoons butter
  • 2 tablespoons veg oil
  • 2 1/2 pounds fresh tomatos peeled & diced
  • 3 tablespoons tomato paste
  • 1/2 teaspoon basil
  • 1/4 cup flour
  • 3 3/4 cups chicken broth
  • 1 tablespoon sugar
  • 1 cup heavy cream
  • 2 cups sliced onions

How To Make fresh tomato soup

  • Step 1
    Heat 8 Tbls Butter & all Oil, add onions and sauté until golden. Add tomatoes, tomato paste, basil & simmer 10 mins. Mix flour & 5 Tbls chicken broth in bowl or jar, stir into tomato mixture. Add rest of chicken broth & simmer 30 mins. Stir occasionally, pour in Blender & blend until smooth, return to pot & add sugar & cream, simmer 5 mins more, add rest of butter and enjoy till you are stuffed!!!!
