Unlike a lot of homemade soups that keep you in the kitchen for hours, this one is quick and doesn't require a lot of special ingredients. Very hearty and filling. Other vegetables can be substituted for the broccoli if you like.

Ingredients

  • 1 package (10 oz.) frozen broccoli, chopped
  • 3 tablespoons butter
  • 1 tablespoon minced onion or very small onion, chopped fine
  • 3 tablespoons all purpose flour
  • 4 cups milk
  • 1/8 teaspoon paprika
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon salt
  • 1 cup shredded extra-sharp cheddar cheese

How To Make ellen's super broccoli soup

  • Step 1
    Cook broccoli 3 minutes. Put in blender to chop fine & drain off liquid. (I skip this part because I like the broccoli a little chunkier.)
  • Step 2
    In a large saucepan, melt butter. Add onions, stir, and add flour. Blend and add milk, stirring until thick.
  • Step 3
    Add the broccoli, paprika, Worcestershire sauce, salt, and cheese. Heat until cheese melts. Serve with crackers or warm bread.
  • Step 4
    If you get tired of broccoli, you may substitute cauliflower, spinach, corn, even asparagus. Use your imagination!
