- 2 - stalks celery, coarsely chopped
- 1 - large onion coarsely chopped
- 2 - cloves garlic minced
- 1 tablespoon olive oil
- 5 cups chicken stock
- 1 - head cauliflower coarsely chopped
- 1/3 cup white wine
- 1 tablespoon lemon juice
- 1 teaspoon worcestershire sauce
- - a pinch of dried marjoram
- 1/2 teaspoon dried thyme
- 1 cup crumbled blue cheese
- 1/8 teaspoon hot pepper sauce
- 2 1/3 TO 3 cups cream or low fat milk
- 1/2 cup flour

Step 1IN A DUTCH OVER, SAUTE THE CELERY, ONIONS, AND GARLI IN THE OIL. STIR IN THE STOCK, CAULIFLOWER, WINE, LEMON JUICE, WORCESTERSHIRE, THYME, MARJORAM,AND HOT PEPPER SAUCE. BRING TO BOIL OVER HIHG HEAT, REDUCE HEAT, COVER AND SIMMER 15 MINUTES.

Step 2REMOVE HALF OF THE VEGETABLES AND PUREE IN A BLENDER OR PROCESSOR. STIR VEGETABLES BACK INTO POT. STIR IN BLUE CHEESE. WHISK IN THE FLOUR UNTIL BLENDED. STIR IN CREAM OF MILK. BRING ALMOST TO A BOIL, REDUCE HEAT AND COOK AND STIR UNTIL THICKENED
