Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup butter (1/2 stick)
  • 1/4 cup flour
  • 14 ounces chicken broth, 1 can
  • 2 cups milk
  • 16 ounces round brie cheese, rind removed
  • - crumbled cooked bacon, optional
  • - chopped chives, for garnish

How To Make cream of brie soup (tnt)

  • Step 1
    Sauté onion and celery in butter in pan until tender. Stir in flour.
  • Step 2
    Cook for a few minutes, stirring constantly. Stir in broth and milk.
  • Step 3
    Cook for 5 minutes or until thickened, stirring constantly. Add cheese and cook until cheese is melted, stirring frequently.
  • Step 4
    Process soup in blender and return to pan. Stir in bacon.
  • Step 5
    Ladle into serving bowls and sprinkle with chives. Serves 4.
