Ingredients
- 2 - cloves garlic
- 4 - scallions
- 8 ounces sour cream
- 2 cups buttermilk
- 1/4 teaspoon cayenne
- - salt and pepper
- 1 - 12-ounce jar of salsa verde
- - small bunch fresh dill
- 5 - cucumbers, peeled and seeded
How To Make chilled cucumber soup

Step 1Roughly chop the cucumbers and scallions, then place in the bowl of a food processor. Add sour cream, buttermilk, cayenne,garlic and salt. Puree until smooth. Serve the soup chilled, with a bowl of the salsa verde on the side to spoon on top. Garnish with a couple sprigs of Dill. Option Cilantro
