Ingredients

- 1 - cauliflower, small florets

- 4 cups chicken broth
- 1 tablespoon minced fresh ginger
- 1 teaspoon curry powder
- 1 teaspoon lemon juice, fresh

How To Make cauliflower, ginger & curry velouté

Step 1In a large heavy bottom pot or Dutch oven, tenderize inion and garlic in butter.

Step 2Add cauliflower, potato, and chicken broth. Bring to a boil.

Step 3Cover and simmer for approximately 15 minutes or until vegetables are tender.

Step 4Purée until smooth. Add ginger and curry before serving. Garnish with croutons.
