Ingredients

  • 1 - minced onion
  • 2 cloves minced garlic
  • 2 tablespoons butter
  • 1 - cauliflower, small florets
  • 1 - potatoe, peeled & cubed
  • 4 cups chicken broth
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon curry powder
  • 1 teaspoon lemon juice, fresh
  • - dash salt &pepper
  • - grilled croutons

How To Make cauliflower, ginger & curry velouté

  • Step 1
    In a large heavy bottom pot or Dutch oven, tenderize inion and garlic in butter.
  • Step 2
    Add cauliflower, potato, and chicken broth. Bring to a boil.
  • Step 3
    Cover and simmer for approximately 15 minutes or until vegetables are tender.
  • Step 4
    Purée until smooth. Add ginger and curry before serving. Garnish with croutons.
