2 clove
minced garlic
2 Tbsp
cauliflower, small florets
potatoe, peeled & cubed
4 c
chicken broth
1 Tbsp
minced fresh ginger
1 tsp
curry powder
1 tsp
lemon juice, fresh
dash salt &pepper
grilled croutons

How to Make Cauliflower, ginger & curry velouté


  • 1In a large heavy bottom pot or Dutch oven, tenderize inion and garlic in butter.
  • 2Add cauliflower, potato, and chicken broth. Bring to a boil.
  • 3Cover and simmer for approximately 15 minutes or until vegetables are tender.
  • 4Purée until smooth. Add ginger and curry before serving.
    Garnish with croutons.
