    minced onion
  • 2 clove
    minced garlic
  • 2 Tbsp
  • 1
    cauliflower, small florets
  • 1
    potatoe, peeled & cubed
  • 4 c
    chicken broth
  • 1 Tbsp
    minced fresh ginger
  • 1 tsp
    curry powder
  • 1 tsp
    lemon juice, fresh
  • ·
    dash salt &pepper
  • ·
    grilled croutons

How to Make Cauliflower, ginger & curry velouté


  1. In a large heavy bottom pot or Dutch oven, tenderize inion and garlic in butter.
  2. Add cauliflower, potato, and chicken broth. Bring to a boil.
  3. Cover and simmer for approximately 15 minutes or until vegetables are tender.
  4. Purée until smooth. Add ginger and curry before serving.
    Garnish with croutons.
