I rec'd this recipe from a neighbor when I lived in Philadelphia, PA and my kids loved it.

Ingredients

  • 2 tablespoons butter
  • 1 cup chopped onion
  • 2 cups shredded cabbage
  • 1 10 oz boxes frozen lima beans
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 stick butter
  • 1/4 cup flour
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
  • 3 cups milk
  • 1-4 ounce shredded cheddar cheese

How To Make cabbage soup

  • Step 1
    Saute onion in 2 tbsp butter in a large heavy sauce pan until tender.(3 mins). then use a large pot, add onion, cabbage, lima beans, carrots, potatoes, broth and salt. Cover, bring to a boil. Reduce heat and simmer 1/2 hr or until potatoes 7 carrots are tender.
  • Step 2
    Meanwhile, melt 1 stick butter in a 4qt dutch oven. Blend in flour, paprika & pepper. Remove from heat, stir in milk, gradually. Heat to boiling stirring constantly. Boil for 1 minute.
  • Step 3
    Remove from heat. Stir in cheddar cheese, gradually, until melted.Return to heat to finish melting cheese, if necessary.Do not boil. Add vegetables with liquid to cheese soup base. Serve with hot biscuits.
