Ingredients

  • 1 medium sweet onion diced
  • 1 teaspoon olive oil, extra virgin
  • 1 tablespoon .minced fresh ginger
  • 3 cloves garlic minced
  • 1/2 teaspoon crushed red pepper
  • 2 teaspoons dried rosemary
  • 1/2 teaspoon salt
  • 1 - 3 lb butternut squash peeled,seeded and cubed
  • 1 pound red apples ,peeled and cored and sliced 2/4 inch thick
  • 2 cups apple cider
  • 2 cups vegetable stock
  • 1 tablespoon lime juice

How To Make butternut - apple soup

  • Step 1
    Preheat a 4 quart pot over medium heat. saute onion in oil until translucent,5 to 7 minutes.Add ginger,garlic,red pepper,Rosemary and salt and saute for 1 minute.Add squash,apples,cider and stock.Cover and bring to boil,then lower heat and simmer briskly until squash is tender,about 20 minutes more,Puree soup using an food processor or blender.add lime juice and serve
