Ingredients

  • 1/4 c
    onion, chopped
  • 1/4 c
    butter
  • 1/4 c
    all purpose flour
  • 1/4 tsp
    salt
  • 1/4 tsp
    fresh cracked black pepper(add more if you like) the more pepper the better the soup =)
  • 3/4 c
    chicken broth
  • 1 1/2 c
    evaporated milk
  • 1 c
    broccoli, chopped
  • 1 c
    cheddar cheese, shredded
  • 1/2 c
    pepper jack, shredded

How to Make Broccoli Cheddar Soup

Step-by-Step

  1. In a saucepan, saute the onion in butter until tender; Stir in flour, salt and pepper; cook and stir until smooth and bubbly.
  2. Add broth and milk all at once; cook and stir until the mixture boils and thickens.
  3. Add broccoli; Simmer, stirring constantly, until heated through.
  4. Remove from the heat and stir in cheese until melted.
