I was going to make broccoli and cheddar soup,I had swiss cheese. My family loved it.

Ingredients

  • 2 bunches broccoli, fresh
  • 1 quart chicken stock
  • 2 cups half and half
  • 1 cup onion small diced
  • 1 tablespoon minced garlic
  • 3 cups swiss cheese shedded
  • 1/4 cup roux
  • - salt and pepper to taste

How To Make broccoli and swiss soup

  • Step 1
    In a large pot saute onions and garlic and then add the chicken stock.
  • Step 2
    Cut the broccoi into small pieces and add to the stock and simmer until the broccoli is tender. Then add the half & half,salt and pepper.
  • Step 3
    Bring to a boil and add the roux until the soup thickens. Then turn off the heat and whisk in the cheese.
  • Step 4
    When the cheese is melted its ready to serve.
