I was going to make broccoli and cheddar soup,I had swiss cheese. My family loved it.

Ingredients
- 2 bunches broccoli, fresh
- 1 quart chicken stock
- 2 cups half and half
- 1 cup onion small diced
- 1 tablespoon minced garlic
- 3 cups swiss cheese shedded
- 1/4 cup roux
- - salt and pepper to taste
How To Make broccoli and swiss soup

Step 1In a large pot saute onions and garlic and then add the chicken stock.

Step 2Cut the broccoi into small pieces and add to the stock and simmer until the broccoli is tender. Then add the half & half,salt and pepper.

Step 3Bring to a boil and add the roux until the soup thickens. Then turn off the heat and whisk in the cheese.

Step 4When the cheese is melted its ready to serve.
