Ingredients

2 c
fresh or frozen blueberries or strawberries
1/2 c
water
1/2 c
sugar
1/2 tsp
orange peel finely shredded
2 Tbsp
orange juice, thawed concentrate
2 c
buttermilk

How to Make BERRY BUTTERMILK SOUP

Step-by-Step

  • 1Thaw berries if frozen, drain. Set aside 5 or6 berries for garnish.
  • 2In a 1 1/2 quart saucepan combine berries, water, sugar, orange peel, and juice. Bring to a boil
  • 3Reduce heat cover and simmer 20 minutes. Cool 30 minutes.
  • 4Pour into blender container cover and blend until smooth.
  • 5Stir in buttermilk. Cover and chill thoroughly.
  • 6Garnish each serving each serving with reserved berries and a thin slice of orange.
