Ingredients
- 2 cups fresh or frozen blueberries or strawberries
- 1/2 cup water
- 1/2 cup sugar
- 1/2 teaspoon orange peel finely shredded
- 2 tablespoons orange juice, thawed concentrate
- 2 cups buttermilk
How To Make berry buttermilk soup

Step 1Thaw berries if frozen, drain. Set aside 5 or6 berries for garnish.

Step 2In a 1 1/2 quart saucepan combine berries, water, sugar, orange peel, and juice. Bring to a boil

Step 3Reduce heat cover and simmer 20 minutes. Cool 30 minutes.

Step 4Pour into blender container cover and blend until smooth.

Step 5Stir in buttermilk. Cover and chill thoroughly.

Step 6Garnish each serving each serving with reserved berries and a thin slice of orange.
