BERRY BUTTERMILK SOUP

fresh or frozen blueberries or strawberries
orange peel finely shredded
orange juice, thawed concentrate
How to Make BERRY BUTTERMILK SOUP
1Thaw berries if frozen, drain. Set aside 5 or6 berries for garnish.
2In a 1 1/2 quart saucepan combine berries, water, sugar, orange peel, and juice. Bring to a boil
3Reduce heat cover and simmer 20 minutes. Cool 30 minutes.
4Pour into blender container cover and blend until smooth.
5Stir in buttermilk. Cover and chill thoroughly.
6Garnish each serving each serving with reserved berries and a thin slice of orange.
