  • 2 c
    fresh or frozen blueberries or strawberries
  • 1/2 c
    water
  • 1/2 c
    sugar
  • 1/2 tsp
    orange peel finely shredded
  • 2 Tbsp
    orange juice, thawed concentrate
  • 2 c
    buttermilk

How to Make BERRY BUTTERMILK SOUP

Step-by-Step

  1. Thaw berries if frozen, drain. Set aside 5 or6 berries for garnish.
  2. In a 1 1/2 quart saucepan combine berries, water, sugar, orange peel, and juice. Bring to a boil
  3. Reduce heat cover and simmer 20 minutes. Cool 30 minutes.
  4. Pour into blender container cover and blend until smooth.
  5. Stir in buttermilk. Cover and chill thoroughly.
  6. Garnish each serving each serving with reserved berries and a thin slice of orange.
