This is a great recipe to use up leftover turkey from Thanksgiving. Or you can sub chicken. Quick to make and tastes hearty with the cheese and half and half.

Ingredients

  • 1 cup green onions, finely chopped
  • 1 cup carrots, finely chopped
  • 1 cup celery, finely chopped
  • 1/4 cup butter, melted
  • 2 cups chicken broth
  • 2 cups half and half
  • 2 cups diced, cooked turkey (or chicken)
  • 1 1/2 cups cheddar cheese, shredded (6 ounces).....use freshly shredded not pre-packaged shredded cheese so it melts)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 dash ground red pepper

How To Make turkey cheese chowder

  • Step 1
    Saute the green onions, carrots, and celery in the butter in a large saucepan over medium heat until tender. Reduce the heat to low; add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the chicken broth and half and half; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
  • Step 2
    Reduce the heat to low. Add the turkey or chicken and the remaining ingredients. Cook, stirring constantly, just until the cheese melts and all ingredients are heated.
