This is a great recipe to use up leftover turkey from Thanksgiving. Or you can sub chicken. Quick to make and tastes hearty with the cheese and half and half.

Ingredients For turkey cheese chowder

1 cgreen onions, finely chopped

1 ccarrots, finely chopped

1 ccelery, finely chopped

1/4 cbutter, melted

2 cchicken broth
-
2 chalf and half
-
2 cdiced, cooked turkey (or chicken)

1 1/2 ccheddar cheese, shredded (6 ounces).....use freshly shredded not pre-packaged shredded cheese so it melts)

1/4 tspsalt

1/4 tspblack pepper

1 dashground red pepper
How To Make turkey cheese chowder

1Saute the green onions, carrots, and celery in the butter in a large saucepan over medium heat until tender. Reduce the heat to low; add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the chicken broth and half and half; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.

2Reduce the heat to low. Add the turkey or chicken and the remaining ingredients. Cook, stirring constantly, just until the cheese melts and all ingredients are heated.
