round up soup

This is my soup from rounding up all the leftovers in my refrigerator that needed to be used up...so just use this as a basic rule of thumb and use those things found in your fridge to make your Round Up Soup.... can be casseroles,hamburger, gravy, veggies, sauces , rice etc..

Ingredients

  • 16 ounces bag northern dry beans
  • 15 ounces can black beans,undrained
  • 1/2 - head cauliflower ,cut bite size
  • 1/4 cup minced onion
  • 5 small mini seeded and chopped bell peppers
  • 3 medium chicken tenders, cut bite size
  • 1 teaspoon ea. oregano and thyme
  • 14 ounces creamed corn
  • 1 cup cooked rice
  • 1 cup chopped kale
  • 2 - bay leaves
  • 1 tablespoon ea. dried chives and garlic powder with parsley
  • 1/2 cup salsa, chunky
  • 2 stalks celery, diced
  • 2 teaspoons pepper
  • 3 tablespoons chicken bouillon granules
  • - instant potatoes to thicken

How To Make round up soup

  • Step 1
    Place Northern beans in medium pan and cover 2 inches above beans with hot wter..Cook to boiling over medium heat.. then simmer for 20 minutes,covered.
  • Step 2
    brown chicken pieces in a little oil in a soup kettle..when browned add the Northers beans and the water. Add remaining ingredients and stir to blend.
  • Step 3
    Now add enouth water to make about 12 cups of soup in the pot(including the ingredients already in the kettle). Stir and cook over medium/low heat ..if soup needs thickening sprinkle some instant potato flakes over top and stir until you get your desired thickness.
  • Step 4
    This is just an idea soup..You use your left overs and pantry add ins for your Round Up Soup.. enjoy a clean refrigerator..he he
