Ingredients
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 cup celery, chopped (250 ml)
- 2 tablespoons butter (30 ml)
- 4 cups chopped potatoes (1l)
- 2 cups chicken broth (500 ml)
- 1 can evaporated milk (354 ml) add after cooking potatoes
- 1 tablespoon dried parsley flakes (15 ml)
- salt and pepper to taste
- 0ptional - chives to garnish
How To Make creamy potato soup

Step 1In a large saucepan, saute onions, celery and garlic in butter until soft and lightly browned.

Step 2Add potatoes and chicken broth, bring to a boil. Cover, reduce heat and simmer for 20 minutes (stirring occasionally) or until potatoes are done.

Step 3Mash to desired texture or puree if preferred.

Step 4Stir in evaporated milk, parsley, and salt and pepper to taste. Heat, but do not allow to boil. and serve garnished with chopped chives.
