cooking for two essentials: yummy crab soup
Spent the evening and the wee hours of the morning working on a couple of new recipes. This crab soup is one of them. Simple to make. imminently modifiable, it will make your taste buds happy. It actually started out when I spied a 4-ounce tin of lump crabmeat in the pantry. And, I thought, what can I do with this? So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 tablespoons sweet butter, unsalted
- 2 tablespoons yellow onion, finely diced
- 2 tablespoons celery, finely diced
- 1 - 2 tablespoons sherry, dry variety
- 1 1/2 tablespoons flour, all-purpose variety
- 1 teaspoon new england seasoning, like old bay
- 1/4 teaspoon paprika, hot or sweet, your choice
- 1 - 2 pinches white pepper, freshly ground, or to taste
- 1 1/4 cups whole milk
- 2 ounces cream cheese, softened
- 1 teaspoon dijon mustard, i prefer grey poupon
- 4 ounces lump crabmeat
- salt, kosher variety, to taste
- ADDITIONAL ITEMS
- lemon wedges, for serving
- oyster crackers, for serving
- OPTIONAL ITEMS
- additional veggies (peas, corn, carrots, etc.)
- diced potatoes
- how about a couple of shrimp
How To Make cooking for two essentials: yummy crab soup

Step 1PREP/PREPARE

Step 2This all comes together in a medium size saucepan. Easy/Peasy

Step 3Gather your ingredients (mise en place).

Step 4Finely chop the onions and celery.

Step 5If you are adding additional veggies and/or potatoes, prep them also.

Step 6Add the butter to a saucepan over medium heat.

Step 7When the butter melts, toss in the veggies.

Step 8If you are using veggies like peas, toss them in towards the end of the recipe. Unless they are fresh; in which case, toss them in now.

Step 9Cook, stirring frequently, until the onions and celery begin to soften, but not brown, 3 – 5 minutes.

Step 10Add the sherry, and cook until reduced by 75%, 2 – 3 minutes.

Step 11Add the dry spices (flour, Old Bay, paprika, pepper), and stir to combine, 1 minute.

Step 12Do not add the salt yet.

Step 13Add the milk and Dijon, and bring up to a simmer, then add the cream cheese. Stir until the cream cheese is melted into the soup, and it begins to thicken, 2 – 4 minutes.

Step 14Do a final tasting for proper seasoning and add salt (or other spices) to taste.

Step 15Carefully fold in the crab.

Step 17Serve while nice and hot, with some crusty bread, or maybe some oyster crackers. Enjoy.
