Ingredients
- 2 1/2 cups water
- 1 teaspoon lemon pepper
- 1 teaspoon cumin seeds, whole
- 4 - chicken breasts
- 1 cup chopped onion
- 2 - cloves pressed garlic
- 2 cans shoepeg corn, not drained
- 2 cans chopped green chilis, not drained
- 2 cans great northern beans, not drained
- 1 teaspoon cumin
- 2-3 tablespoons lime juice
- - white tortilla chips
- - shredded Monterey Jack cheese
How To Make white bean chili

Step 1Cook chicken breasts, in water with lemon pepper and 1 tsp cumin seeds until chicken is tender. cut into small pieces and add to liquid in pot.

Step 2Saute 1 cup onion and garlic in olive oil until clear. Add to liquid in pot.

Step 3Add shoepeg corn, green chilis, great northern beans, 1 tsp cumin, and lime juice. Heat.

Step 4Serve over white corn tortilla chips and Monterey Jack cheese.
