Ingredients

water
1 tsp
lemon pepper
1 tsp
cumin seeds, whole

chicken breasts
1 c
chopped onion
2
cloves pressed garlic
2 can(s)
shoepeg corn, not drained
2 can(s)
chopped green chilis, not drained
2 can(s)
great northern beans, not drained
1 tsp
cumin
2-3 Tbsp
lime juice
white tortilla chips
shredded Monterey Jack cheese

How to Make White Bean Chili

Step-by-Step

  • 1Cook chicken breasts, in water with lemon pepper and 1 tsp cumin seeds until chicken is tender. cut into small pieces and add to liquid in pot.
  • 2Saute 1 cup onion and garlic in olive oil until clear. Add to liquid in pot.
  • 3Add shoepeg corn, green chilis, great northern beans, 1 tsp cumin, and lime juice. Heat.
  • 4Serve over white corn tortilla chips and Monterey Jack cheese.
