This is a recipe from my sister Malinda. It's delicious.

Blue Ribbon Recipe

I was expecting to like this chili, but it turns out that I love it!  The combination of flavors makes this one great dish.

Ingredients

  • 2 1/2 cups water
  • 1 teaspoon lemon pepper
  • 1 teaspoon cumin seeds, whole
  • 4 - chicken breasts
  • 1 cup chopped onion
  • 2 - cloves pressed garlic
  • 2 cans shoepeg corn, not drained
  • 2 cans chopped green chilis, not drained
  • 2 cans great northern beans, not drained
  • 1 teaspoon cumin
  • 2-3 tablespoons lime juice
  • - white tortilla chips
  • - shredded Monterey Jack cheese

How To Make white bean chili

  • Step 1
    Cook chicken breasts, in water with lemon pepper and 1 tsp cumin seeds until chicken is tender. cut into small pieces and add to liquid in pot.
  • Step 2
    Saute 1 cup onion and garlic in olive oil until clear. Add to liquid in pot.
  • Step 3
    Add shoepeg corn, green chilis, great northern beans, 1 tsp cumin, and lime juice. Heat.
  • Step 4
    Serve over white corn tortilla chips and Monterey Jack cheese.
