white bean chicken chili

This recipe is from my sister in law Sheryl Lowery she and my mother in law are avid football fans and love to start a pot of soup before the game so they have a snack at half time.

Ingredients

  • 2 tablespoons butter or margarine
  • 12 ounces boneless skinless chicken breast, cubed
  • 1/2 cup onion, chopped
  • 3 cans great northern white beans, undrained
  • 1 cup water
  • 1 can (4.5oz) green chilies
  • 3 teaspoons chicken bouillon granules
  • 1 teaspoon cumin
  • - salt and pepper to taste

How To Make white bean chicken chili

  • Step 1
    In a large saucepan melt butter, cook chicken and onion until chicken is lightly brown. Add remaining ingredients, mix well, bring to a boil, reduce heat and simmer for 15 minutes, until slightly thickened. Mash beans slightly with hand held blender or potato masher.
  • Step 2
    Serve topped with sour cream and cheddar cheese.
  • Step 3
    Serving ideas: Other suggestion is cilantro and salsa.
