This recipe is from my sister in law Sheryl Lowery she and my mother in law are avid football fans and love to start a pot of soup before the game so they have a snack at half time.

  • 2 Tbsp
    butter or margarine
  • 12 oz
    boneless skinless chicken breast, cubed
  • 1/2 c
    onion, chopped
  • 3 can(s)
    great northern white beans, undrained
  • 1 c
  • 1 can(s)
    (4.5oz) green chilies
  • 3 tsp
    chicken bouillon granules
  • 1 tsp
  • ·
    salt and pepper to taste

How to Make White Bean Chicken Chili


  1. In a large saucepan melt butter, cook chicken and onion until chicken is lightly brown. Add remaining ingredients, mix well, bring to a boil, reduce heat and simmer for 15 minutes, until slightly thickened. Mash beans slightly with hand held blender or potato masher.
  2. Serve topped with sour cream and cheddar cheese.
  3. Serving ideas: Other suggestion is cilantro and salsa.
