White Bean Chicken Chili
2 Tbspbutter or margarine
12 ozboneless skinless chicken breast, cubed
1/2 conion, chopped
3 can(s)great northern white beans, undrained
1 can(s)(4.5oz) green chilies
3 tspchicken bouillon granules
·salt and pepper to taste
How to Make White Bean Chicken Chili
- In a large saucepan melt butter, cook chicken and onion until chicken is lightly brown. Add remaining ingredients, mix well, bring to a boil, reduce heat and simmer for 15 minutes, until slightly thickened. Mash beans slightly with hand held blender or potato masher.
- Serve topped with sour cream and cheddar cheese.
- Serving ideas: Other suggestion is cilantro and salsa.
