This quick and easy recipe has all the flavor of a chili that traditionaly simmers all day! My White Bean Chicken chili is a great alternative to the tomato and beef based chili.

Ingredients
- 3 cups cooked, cubed chicken
- 1 medium chopped white onion
- 1 can 4.25 oz can chopped green chilies
- 4 cups chicken broth
- 3 cans 15 oz canned great northern beans, drained and rinsed
- 1 tablespoon dried oregano
- 1 tablespoon cumin
- 1 tablespoon red pepper flakes
- 1+ cup heavy whipping cream
- 2 tablespoons olive oil for saute
- 1-2 pinch salt and pepper to taste

Step 1Prep: Finally chop 1 medium white onion and cut cooked chicken into bite size cubes (a prepared rotiseri chicken works great as well). Open, drain and rinse the canned beans.

Step 2In a dutch oven or deep pot over medium-high add the olive oil and saute the onion, chilies, oregano, cumin and red pepper flakes 5 minutes until softened and incorporated. Reduce heat and add the broth, beans, cream and heavy whipping cream. Simmer for 20 minutes and serve hot with crusty bread.
