the best gluten free chili ever!

I inherited this recipe from a friend of mine who has an autistic child, and instead of a barbecue, we had chili, which at first I thought was a little strange, until I learned why, and just how good this chili recipe is. My favorite, and I've put my own spin on it, of course.

Ingredients

  • 2 pounds beef stew meat
  • 1 - onion
  • 1 1/2 pounds ground beef
  • 1 package chorizo sausage
  • 32 ounces organic beef broth
  • 28 ounces diced tomatos
  • 1/4 cup chili powder
  • 2 teaspoons cumin
  • 2 - raw scored jalapenos
  • 2-3 bunches chopped fresh cilantro
  • OPTIONAL
  • 2 - halved cinnamon stick
  • 2 - bay leaves
  • - sour cream
  • - cheddar cheese

How To Make the best gluten free chili ever!

  • Step 1
    Brown 2 lbs of diced stew meat in EVOO with salt.
  • Step 2
    Cut up onion. Add with the ground beef to the browned stew meat and fry it up together.
  • Step 3
    While that is frying, cut up the chorizo sausage into small pieces. Then add that to the meat mixture.
  • Step 4
    Add beef broth, diced tomatoes, chili powder, cumin, garlic salt, jalapenos, and cilantro, and let simmer together for 30 minutes or so.
  • Step 5
    If you have no need for gluten free go ahead and add sour cream or cheddar cheese, otherwise, serve as is or add cinnamon sticks or bayleaves. This chili is absolutely phenomenal. I'm so sure you will enjoy it!
