One of my favorites. It makes a lot! but all the better to freeze!

Ingredients

  • 1 pound super lean ground beef
  • 1 medium onion
  • 2 cloves garlic
  • 1 bunch fresh cilantro
  • 3 cans corn (drained)
  • 2 cans black beans (washed and drained)
  • 2 cans light red kidney beans (washed and drained)
  • 1 16oz cans beef stock
  • 4 cups water
  • 1-2 package taco seasoning mix
  • 1 package sour cream

How To Make southwestern soup

  • Step 1
    In a large boiler cook ground beef, chopped onion, and minced garlic until onions are see through.
  • Step 2
    While that is cooking wash and drain beans and corn. Also chop half the fresh cilantro and open remaining cans.
  • Step 3
    Bring to a rolling boil and drop down to a simmer for an hour.
  • Step 4
    Put in a bowl with a do-lip of sour cream and some chopped cilantro. serve with tortilla chips
