  • 1 lb
    super lean ground beef
  • 1 medium
  • 2 clove
  • 1 bunch
    fresh cilantro
  • 3 can(s)
    corn (drained)
  • 2 can(s)
    black beans (washed and drained)
  • 2 can(s)
    light red kidney beans (washed and drained)
  • 1 16oz can(s)
    beef stock
  • 4 c
  • 1-2 pkg
    taco seasoning mix
  • 1 pkg
    sour cream

How to Make Southwestern soup


  1. In a large boiler cook ground beef, chopped onion, and minced garlic until onions are see through.
  2. While that is cooking wash and drain beans and corn. Also chop half the fresh cilantro and open remaining cans.
  3. Bring to a rolling boil and drop down to a simmer for an hour.
  4. Put in a bowl with a do-lip of sour cream and some chopped cilantro. serve with tortilla chips
