I make this for camping almost every time we go. Nobody ever knows it's made with ground soy! It serves several purposes as well, not just chili, but it makes a great "pizza pie" filling between two slices of bread and cooked over the fire.

del monte® petite cut® diced tomatoes with green chilies
1 can(s)
black beans
1 can(s)
chickpeas (garbanzo beans)
1-12oz. pkg
boca (or other soy) ground crumbles
1-7oz. can(s)
diced jalapenos
1
green pepper, diced
1/2
vidalia onion, diced
1 can(s)
del monte tomato sauce
1 tsp
salt
2 Tbsp
chili powder
1 tsp
black pepper
1 tsp
red pepper flakes
3 clove
garlic, chopped
1 1/2 c
al dente elbow macaroni
1 c
chives, chopped
1 c
shredded cheese (chili preferred)

How to Make Shhh it's not meat chili

Step-by-Step

  • 1Boil elbow macaroni until al dente, set aside.
  • 2In a large pot, add olive oil to cover bottom of pan, turn to medium heat. When hot, add in onions, garlic, green peppers and saute until onions are almost translucent. Add in Boca crumbles, and stir.
  • 3Combine the rest of the ingredients MINUS the noodles, chives, and cheese and stir until well mixed. Let simmer for an hour.
  • 4Add in the noodles and continue simmering for another 2 hours or longer. When done, add the cheese and top with the chives when serving.
