This is a great vegetarian chili, with all kinds of veggies.

Ingredients

  • 2 tablespoons canola oil
  • 1 - zuchinni, sliced
  • 1 - yellow squash, sliced
  • 1 - red bell pepper, chopped
  • 1 - green bell pepper, chopped
  • 1 small 4 oz can chili pepppers, chopped
  • 4 teaspoons minced garlic
  • 1 - onion, chopped
  • 1 - 28 oz can crushed tomatoes and their juices
  • 1 - 6 oz can tomato paste
  • 1 - 15 oz can black beans, drained
  • 1 - 15 oz can whole kernel corn, drained
  • 1 - 15 oz can chili beans in spicy sauce, undrained
  • 1/2 teaspoon dried oregano
  • 1 tablespoon chili powder
  • 1/4 teaspoon cayenne pepper

How To Make mix it up veggie chili

  • Step 1
    Heat oil in lg pot over med-high heat. Stir in zuchinni, yellow squash, peppers, chili peppers, garlic and onion. Cook 5 mins. Mix crushed tomatoes, tomato pasta, black beans, corn and chili beans into pot. season w/ chili powder, oregano, and cayenne pepper. Bring to a boil. Reduce heat to low. Simmer 1 hr, stirring occasionally.
