Ingredients
- 2 tablespoons canola oil
- 1 - zuchinni, sliced
- 1 - yellow squash, sliced
- 1 - red bell pepper, chopped
- 1 - green bell pepper, chopped
- 1 small 4 oz can chili pepppers, chopped
- 4 teaspoons minced garlic
- 1 - onion, chopped
- 1 - 28 oz can crushed tomatoes and their juices
- 1 - 6 oz can tomato paste
- 1 - 15 oz can black beans, drained
- 1 - 15 oz can whole kernel corn, drained
- 1 - 15 oz can chili beans in spicy sauce, undrained
- 1/2 teaspoon dried oregano
- 1 tablespoon chili powder
- 1/4 teaspoon cayenne pepper
How To Make mix it up veggie chili

Step 1Heat oil in lg pot over med-high heat. Stir in zuchinni, yellow squash, peppers, chili peppers, garlic and onion. Cook 5 mins. Mix crushed tomatoes, tomato pasta, black beans, corn and chili beans into pot. season w/ chili powder, oregano, and cayenne pepper. Bring to a boil. Reduce heat to low. Simmer 1 hr, stirring occasionally.
