kick butt good.. chili dog chili!!!

Our family loves chili dogs... and of course chili... being diabetic myself, I wanted to cut the carbs but still have the flavor of a chili dog... so my daughter Noel, her children and I came up with this recipe.... we have had it many times and we all enjoy it each and every time we have it! It is a healthier chili than most... because it is loaded with veggies! Trust me... this is kick butt good!

Ingredients For kick butt good.. chili dog chili!!!

  • CHILI
  • 1 lg
    each: red and white or yellow onion (chopped)
  • 1 lg
    green bell pepper (chopped)
  • 8 lg
    tomatoes (chopped large) or use two large cans of tomatoes
  • 1/2 c
    fresh cilantro (chopped) (also include finely chopped stems)
  • 2 lg
    yellow and green zucchini (chopped to desired sizes)
  • 6 clove
    garlic (chopped to desired size)
  • 3 lb
    favorite ground beef (pork or turkey works too) browned
  • 8-10
    hot dogs of choice (cut into round coins and browned)
  • 2-3 qt
    pasta sauce of your choice
  • 1 can
    (12 ounces) tomato paste (added to pasta sauce)
  • 1 tsp
    each: garlic powder, ground black pepper, cayenne pepper
  • 3 Tbsp
    ground cumin powder
  • 1-2 Tbsp
    ground chili powder
  • 1-2 can
    each: pinto beans, black beans and butter beans (use one or two cans of each kind according to your liking of beans) (you can also use kidney beans)
  • OPTIONAL INGREDIENTS
  • 1 tsp
    sea salt (or to taste for the chili)
  • yellow mustard (for garnish and to taste)
  • raw onion (for garnish and to taste)
  • hot dog coins (for garnish)

How To Make kick butt good.. chili dog chili!!!

  • Red and White onions chopped.
    1
    Chop the Onions. (Set aside some of this onion for garnish/serving.... optional)
  • Chopped green pepper

    Chop the green peppers.
  • Tomato, onion and cilantro being stirred into the pot.

    chop the cilantro and tomatoes. Mix them together with onions and spices. Set aside until needed.
  • Yellow and green zucchini.

    Chop the Zucchinis.
  • 5
    Chop the garlic.
  • Yellow and green zucchini.

    Saute the zucchini and garlic in skillet.
  • Ground beef
    7
    Brown the ground beef in skillet.
  • Sliced Hot Dogs.... pan fried... But we also have just thown some in the saute skillet in the past.... and another way we like to do the hot dogs is cook them outside on the grill and use the left over hot dogs for our chili.

    Brown the hot dog coins.
  • This is fresh tomatoes made into a chunky sauce... but we sometimes just use chunky style pasta sauce from a can.

    In a large pot cook together the veggies that are not cooked yet... when they are cooked. Add the tomato sauce. Simmer about 15 minutes on medium - low stirring occassionally.
  • Sauted Vegetables with browned ground beef and sliced hot dogs.

    Mix together all of the cooked ingredients.

    Add the canned beans.
  • The three cans of beans added to the pot!

    Simmer together about 15 minutes stirring occassionally on medium low heat.
  • Garnished with a swirl of mustard, some chopped onion and hotdog slices.... served with grilled cheese sandwiches!  Yum!

    While this is simmering we sometimes make grilled cheese sandwiches.... but not really needed... I don't eat bread very often myself.
  • This tastes just like a chili dog without the bun!

    Scoop some chili into bowls. Garnish with a swirl of mustard, some chopped onion and a few slices of the hot dog!!! Enjoy!
