kale and bean chili!

This chili/soup si so good and flavorful but not only that it is so good for you. Ok so I wanted to make my lentil chili but I had no lentils lol. I had some kale in the fridge and I said why not. Boy I had no idea how delicious this was going to be. Perfect for a cold day warms up your whole body. This recipe is definitely a keeper.

Ingredients

  • 2 tablespoons chili powder
  • 1 tablespoon ground cummin
  • 1 tablespoon paprika
  • 1/4 teaspoon ground cayenne
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 teaspoons tomato paste
  • 1/2 teaspoon salt (sea salt)
  • 1/4 teaspoon ground black pepper
  • 1/2 cup fresh cilantro
  • 2 bunches fresh kale chopped
  • 3 cups cooked beans any kind you like i love northern beans.
  • 3 cups chicken stock ( vegetable is fine too)
  • 1 can diced tomatoes (14oz)
  • 1/2 - white onion diced
  • TOPPINGS
  • - cheese
  • - sourcream
  • - chopped cilantro
  • - chives

How To Make kale and bean chili!

  • Step 1
    In a pot add olive oil about 3 tablespoons add onions and softened cook in medium setting. Add spices and let them bloom cook for about 1 minute. Add tomato paste and cook for 1 minute. At this point add stock and canned tomatoes . Stir until everything is combined.
  • Step 2
    Add kale and cilantro cook for about 7 minutes add beans after that just until they are warmed through about 4 minutes. taste the kale and cook to the consistency you like. Let the chili/soup cool down a little so you don't burn your mouth. Ladle the soup into a bowl and garnish with any toppings you like and enjoy.
  • Step 3
    This would be awesome if you served it in a bread bowl.
