gridiron chili
I made this chili during the Hawks game and it turned out really good. I took some of the leftovers to a friend at work and she sent me a message telling me it was "Amazing". as if sang in a broadway musical. Unfortunately i ate the last bowl late the other night and FORGOT to get a picture; slap my hand. This is better the next day serve with cornbread or you choice of toppings.

Ingredients
- - vegetable oil
- 3 - yellow onions,chopped
- 3 cloves garlic, minced
- 1 can (15oz) can tomato sauce
- 4 stalks st celery, diced
- 1 - red pepper, diced
- 1 - green pepper, diced
- 1 can diced tomatoes with chili's
- 1 can can tomatoes, drained
- 2 pounds tri tip steaks
- 3 tablespoons chili powder
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon sugar
- 1/4 teaspoon ground nutmeg
- 1 can favorite beans, drained
How To Make gridiron chili

Step 1Gather all dry spices and place in spice/coffee grinder and pulse about 30 seconds. In a dry sauté pan toast spices on medium heat until fragment, about two minutes and set aside.

Step 2Cut 1 pound of steak into 3/4 inch thick chunks and 1 pound into 1 1/4 inch thick chunks. Dry beef thoroughly with paper towels, then season with salt and pepper. Heat 1 tablespoon of oil over medium high heat until just smoking. Brown 1/2 of beef cubes thoroughly on all sides and repeat with remaining meat. Put in Dutch oven or crockpot insert.

Step 3Add some cooking oil to sauté pan add fresh diced vegetables and sweat vegetable. Add to slow cooker insert or Dutch oven.

Step 4Add tomatoes, tomato sauce, garlic, and 1/3 spices and cook in slow cooker hi heat 6-7 hours or low heat 9-10 hours. One third of the way thru cooking add 1/3 spices and when 1 hour is left add remaining spice. if cooking in Dutch oven cook simmer pot of chili 3 hours or until meat is tender. Add spices in similar increments.

Step 5if adding a can of your favorite beans at 15 minutes before serving. At this time add 1teaspoon oregano and adjust seasoning with salt and pepper.

Step 6NOTE: leftovers can be refrigerated several days or frozen for several monthes.
