Super unconventional! The ground beef is not browned and drained of fat. This recipe is a one-of-a-kind to Ganado Cafe and Ganado, AZ that burned down years ago. Ganado Cafe was tiny cafe attached to Ganado Trading Post on the Navajo Indian Reservation. People came from miles around for this chili and mom's lemon pie. I believe this is the best chili, hands-down anywhere. The use of tapioca to thicken is brilliant!. Serve this as-is, with cornbread, or on top of chili-dogs or on open-faced chili burgers.

Ingredients
- 1 1/2 pounds lean ground beef
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1/8 teaspoon crushed red pepper
- 2 teaspoons japanese paprika or smoked paprika
- 2 tablespoons chile powder
- pinto beans
- 1/4 to 1/2 cup tapioca granules
- salt and pepper to taste
How To Make ganado cafe chile con carne

Step 1Cover the raw hamburger meat with water. Start cooking and break up the meat as it cooks with a large spoon. Add all ingredients EXCEPT the beans. Simmer for an hour. Add beans and heat through.

Step 2To thicken.....use tapioca. Get the chili to a slow boil. Pour in the tapioca in a little thin stream until the chile is a nice thickness you like.
