dee dee's chicken chili with white beans
This is a change from my tomato based chili but non the less, very tasty and good! With the days getting cooler, chili just seemed fitting for today! While this is not on my low carb diet, I think it's probably pretty healthy! Enjoy!

Ingredients
- 3 large boneless chicken breast (about 2 lbs)
- 32 ounces chicken broth
- 1 cup chopped onions
- 4 cloves garlic, minced
- 1 teaspoon oregano, dried
- 1 teaspoon white pepper
- 1 teaspoon red pepper flakes
- 1 1/2 teaspoons cummin
- 1/2 teaspoon everglades seasoning
- - salt to taste
- 2 pints canned great nothern beans, drained (or two 15-oz cans)
- 1 - (15-oz) can whole kernel corn, drained
- 2 tablespoons lime juice
- - colby jack cheese for garnish
- - snipped green onions for garnish
How To Make dee dee's chicken chili with white beans

Step 1Combine first 11 ingredients in a heavy 6-quart pot. Bring to a boil, and cook over medium heat until chicken is tender and done. Remove chicken from pot; set aside to cool.

Step 2Add beans, corn and lime juice to pot.

Step 3Once chicken is cool enough to handle (I cut it hot), cut into bite size pieces and return to pot. Simmer over a medium low heat for 30 minutes.

Step 4Spoon into bowls and garnish with cheese, onions, peppers, sour cream...etc Serve with a hot buttered slice of cornbread.
