Adapted from a recipe in "The Mini Page" kids' insert found in many newspapers.

This dish is tasty and satisfying and practically dances with color.

Ingredients

1 Tbsp
olive oil
1
small red bell pepper, chopped
1
medium zucchini, cubed
1 c
chopped mushrooms
3 clove
garlic, minced or crushed
3/4 Tbsp
chili powder
1 tsp
cumin
1/8 tsp
salt
scant 1/4 tsp
cinnamon
2 can(s)
diced tomatoes (do not drain)
1 can(s)
red beans, drained
1
medium tomato, diced, or a few chery tomatoes, cut in half (to add color, use yellow or orange tomatoes)

How to Make Colorful Meatless Chili

Step-by-Step

  • 1Heat oil in large soup pot or wide, deep skillet over medium heat.
  • 2Add all vegetables and garlic, stirring until vegetables soften.
  • 3Add seasonings and cook an additional 5 minutes.
  • 4Stir in tomatoes and beans.
  • 5Heat on medium for 10 minutes, then lower heat and simmer for 25 minutes. During last 7-8 minutes, add chopped fresh tomatoes.
