Adapted from a recipe in "The Mini Page" kids' insert found in many newspapers. This dish is tasty and satisfying and practically dances with color.

Ingredients
- 1 tablespoon olive oil
- 1 - small red bell pepper, chopped
- 1 - medium zucchini, cubed
- 1 cup chopped mushrooms
- 3 cloves garlic, minced or crushed
- 3/4 tablespoon chili powder
- 1 teaspoon cumin
- 1/8 teaspoon salt
- scant 1/4 teaspoon cinnamon
- 2 cans diced tomatoes (do not drain)
- 1 can red beans, drained
- 1 - medium tomato, diced, or a few chery tomatoes, cut in half (to add color, use yellow or orange tomatoes)
How To Make colorful meatless chili

Step 1Heat oil in large soup pot or wide, deep skillet over medium heat.

Step 2Add all vegetables and garlic, stirring until vegetables soften.

Step 3Add seasonings and cook an additional 5 minutes.

Step 4Stir in tomatoes and beans.

Step 5Heat on medium for 10 minutes, then lower heat and simmer for 25 minutes. During last 7-8 minutes, add chopped fresh tomatoes.
