colorful meatless chili

Adapted from a recipe in "The Mini Page" kids' insert found in many newspapers. This dish is tasty and satisfying and practically dances with color.

Ingredients

  • 1 tablespoon olive oil
  • 1 - small red bell pepper, chopped
  • 1 - medium zucchini, cubed
  • 1 cup chopped mushrooms
  • 3 cloves garlic, minced or crushed
  • 3/4 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/8 teaspoon salt
  • scant 1/4 teaspoon cinnamon
  • 2 cans diced tomatoes (do not drain)
  • 1 can red beans, drained
  • 1 - medium tomato, diced, or a few chery tomatoes, cut in half (to add color, use yellow or orange tomatoes)

How To Make colorful meatless chili

  • Step 1
    Heat oil in large soup pot or wide, deep skillet over medium heat.
  • Step 2
    Add all vegetables and garlic, stirring until vegetables soften.
  • Step 3
    Add seasonings and cook an additional 5 minutes.
  • Step 4
    Stir in tomatoes and beans.
  • Step 5
    Heat on medium for 10 minutes, then lower heat and simmer for 25 minutes. During last 7-8 minutes, add chopped fresh tomatoes.
