This started out as a soup made out as an experiment. However, everyone loved it and requested the recipe. Our family of 8 requires the recipe to be doubled.

Ingredients

  • 3 tablespoons olive oil, extra virgin
  • 2 cups water
  • 1 cup onion, chopped
  • 1 can great northern beans
  • 1 cup carrot, sliced
  • 2 cups cooked chicken, finely chopped
  • 2 cloves garlic, crushed
  • 1/4 cup salsa
  • 2 teaspoons cumin
  • - sour cream, optional
  • 2 cups chicken broth
  • - tortilla chips

How To Make chicken chili soup

  • Step 1
    Fry onion, carrots and garlic in large pot until onion is tender. Add cumin and flour. Stir and cook for 2 minutes. Add broth, water, beans and salsa. Bring to boiling. Add chicken. Reduce to simmer, cover and cook until carrots are tender. Top with chips and sour cream.
