This started out as a soup made out as an experiment. However, everyone loved it and requested the recipe. Our family of 8 requires the recipe to be doubled.

Ingredients

  • 3 Tbsp
    olive oil, extra virgin
  • 2 c
    water
  • 1 c
    onion, chopped
  • 1 can(s)
    great northern beans
  • 1 c
    carrot, sliced
  • 2 c
    cooked chicken, finely chopped
  • 2 clove
    garlic, crushed
  • 1/4 c
    salsa
  • 2 tsp
    cumin
  • ·
    sour cream, optional
  • 2 c
    chicken broth
  • ·
    tortilla chips

How to Make Chicken Chili Soup

Step-by-Step

  1. Fry onion, carrots and garlic in large pot until onion is tender. Add cumin and flour. Stir and cook for 2 minutes. Add broth, water, beans and salsa. Bring to boiling. Add chicken. Reduce to simmer, cover and cook until carrots are tender. Top with chips and sour cream.
