1 pound lean ground beef
2 cups diced potatoes
1/2 cup finely chopped onions
4 cups water
1 teaspoon salt
1/4 teaspoon celery salt
!/2 teaspoon pepper
1/4 cup chopped new mexico or anaheim green chile*
1 can 14 once diced tomatoes

How to Make Caldillo (Northern New Mexico-style Soup)


  • 1Fry beef in a medium-sized saucepan at medium heat until browned. Add potatoes and continue to fry until potatoes are golden brown.
  • 2Add onions, water, seasonings,tomatoes and Chile.
  • 3Cover and simmer at low heat until potatoes are tender. Serve hot.
