  • 1 c
    dried pinto beans, sorted & rinsed
  • 1 c
    chunky salsa
  • 1 c
    frozen whole kernel corn
  • 14 oz
    can of chicken broth
  • 1 tsp
  • 2 Tbsp
    chopped fresh cilantro (i use dried & it works fine)
  • 2 lb
    chicken breasts, boneless and skinless

How to Make Southwestern Chicken & Bean Stew


  1. Soak beans overnight; drain & rinse. Combine beans & all ingredients (except cilantro) in crock pot. Mix well; cover; cook on Low 10-12 hours. Stir in cilantro.
