This is a very fast and favorite in our family. It can easily be doubled and nothing gets left behind.

Ingredients

  • box or can - large can or box of chicken broth
  • 2 cans black beans, rinsed
  • 2 cans diced tomatoes with chilis
  • 1 bag sweet white frozen corn
  • 2or3 cloves garlic
  • 1/2 cup lime juice
  • 2 tablespoons chili powder
  • 1 large cooked and diced chicken(can buy already cooked from deli
  • 1 cup water
  • 1 cup sour cream
  • 1 bunch cilantro, fresh and chopped

How To Make south western chicken tortilla soup

  • Step 1
    Can be cooked in a crock pot or on the stove top. Put all ingredients in a crockpot or large kettle except the sour cream and Cilantro.
  • Step 2
    As soon as soup getsvery hot add sour cream and stir in till well mixed.
  • Step 3
    A few minutes before serving add schopped Cilantro to the pot. Serve with Tortilla chips, cheese, and onions if desired.
