I had a taste for soup. I used ingredients I had on hand. This soup came out better than I expected. Healthy and delicious served on it's own or with bread.

Ingredients

  • 3-4 pounds chicken breasts
  • 8 cups low sodium chicken broth
  • 4 cups carrot, sliced
  • 4 cups celery,sliced
  • 2 28 oz cans low sodium diced tomatoes
  • 1/4 cup coarse sea salt
  • 2 tablespoons black pepper
  • 1/4 cup italian seasoning
  • 3 tablespoons garlic powder
  • 3/4 cup jarred minced garlic
  • 3 tablespoons parsley flakes
  • 3 tablespoons oregano, dried
  • 1 tablespoon lemon pepper
  • 2 cups gluten free pasta or any small shell pasta

How To Make slow cooker italian chicken soup

  • Step 1
    Defrost chicken breasts if needed. Cut in bite size chunks. Add to slow cooker with broth.
  • Step 2
    Slice carrots and celery. Add to slow cooker.
  • Step 3
    Add tomatoes and seasonings.
  • Step 4
    Cook on low for 8 hours.
  • Step 5
    Add pasta and cook on high for 30 minutes-4 hours until pasta is cooked. Serve with bread.
