I had a taste for soup. I used ingredients I had on hand. This soup came out better than I expected. Healthy and delicious served on it's own or with bread.

Slow Cooker Crock Pot


  • 3-4 lb
    chicken breasts
  • 8 c
    low sodium chicken broth
  • 4 c
    carrot, sliced
  • 4 c
  • 2 28 oz can(s)
    low sodium diced tomatoes
  • 1/4 c
    coarse sea salt
  • 2 Tbsp
    black pepper
  • 1/4 c
    italian seasoning
  • 3 Tbsp
    garlic powder
  • 3/4 c
    jarred minced garlic
  • 3 Tbsp
    parsley flakes
  • 3 Tbsp
    oregano, dried
  • 1 Tbsp
    lemon pepper
  • 2 c
    gluten free pasta or any small shell pasta

How to Make Slow Cooker Italian Chicken Soup


  1. Defrost chicken breasts if needed. Cut in bite size chunks. Add to slow cooker with broth.
  2. Slice carrots and celery. Add to slow cooker.
  3. Add tomatoes and seasonings.
  4. Cook on low for 8 hours.
  5. Add pasta and cook on high for 30 minutes-4 hours until pasta is cooked. Serve with bread.
