Ingredients
- 1 pound chicken breast,cut into 1 inch pieces
- 4 cups chicken broth
- 1 cup onion,choppes
- 1/2 cup mushrooms,sliced
- 1/2 - red bell pepper,sliced
- 1 tablespoon minced fresh ginger
- 1 tablespoon sugar
- 1 tablespoon grated fresh lime zest
- 2 tablespoons chopped fresh cilantro
- 1 cup wild rice, cooked
- 1(15oz) can coconut milk (can use unsweetened)
- pinch salt and pepper
How To Make refreshing summer soup (crock pot)

Step 1Combine chicken ,broth,onion,pepper,mushrooms,ginger, sugar and spices in a slow cooker.Cook on high 4 hours.

Step 2Stir in rice,coconut milk and lime zest.Cook another 20 minutes or until warm up well.Serve with cilantro on top.
