red, white and green soup

I love soups!! A local sandwich and soup cafe made this wonderful soup and I had to try and figure out their recipe....this is my version...pretty close! Sometimes I feel like no chicken....I just add more beans. Use your favorite beans...I use black, white, or even black-eyed peas. Very filling!

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon garlic, minced
  • 1 - onion, diced
  • 32 ounces chicken broth, non-fat
  • 1-2 - chicken breasts, cubed
  • 2-3 cans white beans, rinsed
  • 9 ounces spinach, fresh
  • 1 can tomatoes, diced w/ garlic and basil
  • 1 can rotel tomatoes (optional)
  • 2 tablespoons lemon juice
  • 16 ounces water
  • - salt, pepper, and basil, to taste
  • 1-2 tablespoon pesto (optional)

How To Make red, white and green soup

  • Step 1
    In large kettle, saute onion, garlic and chicken breasts in olive oil till chicken is done (no pink).
  • Step 2
    Add spinach and cook till wilted. Add lemon juice, broth, water, and seasonings.
  • Step 3
    Add beans and tomatoes, and simmer till flavors meld.
