gluten free quick & healthy chicken noodle soup

A friend of mine gave me this recipe to try while trying to loose weight.It's a little cool here in PA today so I made this for lunch.Woody and I loved it. You would never know that this is a gluten free recipe. Going to share this with my family and friend for sure.

Ingredients

  • 2 cups water
  • 1 - (32 ounce) carton fat-free lower sodium chicken broth
  • 1 tablespoon olive oil,light
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 medium carrot, chopped
  • 1/2 teaspoon each of salt and pepper
  • 6 ounces gluten free twisted rotini
  • 1 1/2 cups shredded cooked skinless chicken breast (rotisserie cooked or leftover baked)
  • 2 tablespoons chopped fresh flat-leaf parsley

How To Make gluten free quick & healthy chicken noodle soup

  • Step 1
    Combine 2 cups water with chicken broth in a mocrowave safe dish and microwave at high 5 minutes.
  • Step 2
    While broth mixture heats, heat a large sauce pan over medium high heat,add oil to pan and swirl to coat.
  • Step 3
    Add onion, celery, carrot,salt and pepper and saute 3 minutes or until almost tender.
  • Step 4
    Remove broth from microwave and add it to the pot along with the pasta and bring to a boil.
  • Step 5
    Cook 7 minutes or until pasta is almost al dente (firm,not soft)
  • Step 6
    Stir in chicken and cook 1 minute or until thoroughly heated and stir in parsley.
  • Step 7
    Remove from stove an serve hot in individual bowls.
