quick and healthy chicken tortilla soup
I love chicken soups in all the different ways you can make them,and I wanted to try to make a south western flavored one, but one that would be very quick and healthy. Here it is!

Ingredients
- 1 tablespoon canola or olive oil
- 1 small onion, chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon minced garlic
- 4 cans 14.5 oz each, chicken broth
- 1 can 10 oz, diced tomatoes w/ green chilies
- 2 cups cooked and shredded chicken breast
- 1 can 15.5 oz, black beans, drained
- 1 cup frozen corn kernels
- 1 cup cooked white or brown rice
- 1 bag baked tortilla strips, i buy them in the produce aisle.
How To Make quick and healthy chicken tortilla soup

Step 1Heat oil in lg pot, over medium heat. Add onion, coriander, cumin and oregano. Cook, stirring, until onion is softened.Add garlic and cook additional 1 minute.

Step 2Add all of the broth and the tomatoes. Bring to a boil. Reduce heat to medium-low. Cook 10 mins, stirring occasionally.

Step 3Stir in chicken, beans, corn and rice. Cook 5 mins, or until heated through. Ladle into bowl and top each bowl w/ some tortilla strips, or serve the tortilla strips on the side.
