1 Tbspcanola or olive oil

1 smallonion, chopped

1 tspground coriander

1 tspground cumin

1 tspdried oregano
-
1 tspminced garlic

4 can(s)14.5 oz each, chicken broth

1 can(s)10 oz, diced tomatoes w/ green chilies

2 ccooked and shredded chicken breast
-
1 can(s)15.5 oz, black beans, drained

1 cfrozen corn kernels
-
1 ccooked white or brown rice
-
1 bag(s)baked tortilla strips, i buy them in the produce aisle.
How to Make Quick and healthy chicken tortilla soup
- Heat oil in lg pot, over medium heat. Add onion, coriander, cumin and oregano. Cook, stirring, until onion is softened.Add garlic and cook additional 1 minute.
- Add all of the broth and the tomatoes. Bring to a boil. Reduce heat to medium-low. Cook 10 mins, stirring occasionally.
- Stir in chicken, beans, corn and rice. Cook 5 mins, or until heated through. Ladle into bowl and top each bowl w/ some tortilla strips, or serve the tortilla strips on the side.
