Ingredients
- 3 tablespoons extra virgin olive oil
- 4 -6 clove garlic
- 1 large onion
- 1 15 ounces can of diced tomatoes
- 1 28 ounces can of crushed tomatoes
- - salt and pepper to taste
- 1 quart chicken stock (i prefer to use chicken broth)
- 4 cups chopped stale bread
- 3 15 ounces cans of small white beans
- 1/2 cup grated parmesan cheese
- 10 - fresh basil leaves

Step 1IN A LARGE DUTCH OVEN OR (STOCK POT)..COOK THE DICED ONION AND THE MINCED GARLIC IN OLIVE OIL 7-8 MINUTES

Step 2DO NOT ADD THE CHOPPED STALE BREAD YET...BUT ADD THE REST OF THE INGREDIENTS AND BRING TO BOILING AND IMMEDIATELY TURN DOWN TO SIMMER FOR ABOUT 5 - 10 MINUTES..... JUST BEFORE SERVING, ADD THE CHOPPED STALE BREAD AND STIR INTO THE SOUP...
