I'M NOT SURE WHERE I GOT THIS RECIPE..I'VE HAD IT A VERY LONG TIME,...I LOVE HOME-MADE SOUPS,AND CASSEROLES, AND I REFER TO THEM AS COMFORT FOODS...EVERYONE WHO HAS TRIED THIS SOUP, LOVES IT....

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 4 -6 clove garlic
  • 1 large onion
  • 1 15 ounces can of diced tomatoes
  • 1 28 ounces can of crushed tomatoes
  • - salt and pepper to taste
  • 1 quart chicken stock (i prefer to use chicken broth)
  • 4 cups chopped stale bread
  • 3 15 ounces cans of small white beans
  • 1/2 cup grated parmesan cheese
  • 10 - fresh basil leaves

  • Step 1
    IN A LARGE DUTCH OVEN OR (STOCK POT)..COOK THE DICED ONION AND THE MINCED GARLIC IN OLIVE OIL 7-8 MINUTES
  • Step 2
    DO NOT ADD THE CHOPPED STALE BREAD YET...BUT ADD THE REST OF THE INGREDIENTS AND BRING TO BOILING AND IMMEDIATELY TURN DOWN TO SIMMER FOR ABOUT 5 - 10 MINUTES..... JUST BEFORE SERVING, ADD THE CHOPPED STALE BREAD AND STIR INTO THE SOUP...

    TOP EACH SERVING WITH GRATED CHEESE AND DRIZZLE WITH OLIVE OIL AND CHOPPED (FRESH) BASIL AS A GARNISH...
