Ingredients For pantry chicken soup lite

1/4 lbboneless, skinless chicken breast or thighs, cute into bite-sized pieces

1/4 cchopped onion

2 tspbutter

1 cred potatoes, diced

1/2 ccarrot, shredded

1 canreduced sodium chicken broth

1/2 cwater
-
1/4 tsppepper
-
2 Tbspuncooked rice

1/8 tspsalt
How To Make pantry chicken soup lite

1In a small non-stick saucepan, saute chicken and onion in the butter until chicken is no longer pink.

2Stir in the potatoes, carrot, broth, water and pepper. Bring to a boil.

3Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.

4Return to a boil; stir in rice and salt. Remove from the heat. Cover and let sit for 5 minutes or until rice is tender.
