boneless, skinless chicken breast or thighs, cute into bite-sized pieces
reduced sodium chicken broth
1In a small non-stick saucepan, saute chicken and onion in the butter until chicken is no longer pink.
2Stir in the potatoes, carrot, broth, water and pepper. Bring to a boil.
3Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.
4Return to a boil; stir in rice and salt. Remove from the heat. Cover and let sit for 5 minutes or until rice is tender.
