Ingredients
- 1/4 pound boneless, skinless chicken breast or thighs, cute into bite-sized pieces
- 1/4 cup chopped onion
- 2 teaspoons butter
- 1 cup red potatoes, diced
- 1/2 cup carrot, shredded
- 1 can reduced sodium chicken broth
- 1/2 cup water
- 1/4 teaspoon pepper
- 2 tablespoons uncooked rice
- 1/8 teaspoon salt
How To Make pantry chicken soup lite

Step 1In a small non-stick saucepan, saute chicken and onion in the butter until chicken is no longer pink.

Step 2Stir in the potatoes, carrot, broth, water and pepper. Bring to a boil.

Step 3Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.

Step 4Return to a boil; stir in rice and salt. Remove from the heat. Cover and let sit for 5 minutes or until rice is tender.
