Ingredients

  • 1 pound chicken breasts, cooked & shredded
  • 1 can 15-oz can whole peeled tomatoes - mashed
  • 1 can 10-oz can enchilada sauce
  • 1 medium onion, finely chopped
  • 1 can 4-oz can mild green chiles, chopped
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 can 14.5 oz. can chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package 16-oz. pkg frozen corn
  • 1 tablespoon fresh cilantro, chopped
  • 1 can your choice - black beans, pinto beans-rinsed and drained
  • 4 corn tortillas, cut into thin strips

How To Make lazy day chicken tortilla soup - slow cooker

  • Step 1
    Saute onions in a little oil until translucent and tender. Add garlic, cumin, chili powder, salt & pepper and cook 30 seconds to 1 minute to let the flavor of the spices bloom.
  • Step 2
    Add onion mixture to slow cooker. Crush tomatoes and add to slow cooker along with the enchilada sauce, chiles, broth and water. Mix well to combine.
  • Step 3
    Add remaining ingredients and cook on low 6 hours or high for 3-4 hours.
  • Step 4
    During last 30 minutes to 1 hour, add tortilla strips to allow them to soften and combine with sauce.
  • Step 5
    Garnish soup bowls with sour cream, cheese or extra cilantro.
