Ingredients
- 1 pound chicken breasts, cooked & shredded
- 1 can 15-oz can whole peeled tomatoes - mashed
- 1 can 10-oz can enchilada sauce
- 1 medium onion, finely chopped
- 1 can 4-oz can mild green chiles, chopped
- 2 cloves garlic, minced
- 2 cups water
- 1 can 14.5 oz. can chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package 16-oz. pkg frozen corn
- 1 tablespoon fresh cilantro, chopped
- 1 can your choice - black beans, pinto beans-rinsed and drained
- 4 corn tortillas, cut into thin strips

Step 1Saute onions in a little oil until translucent and tender. Add garlic, cumin, chili powder, salt & pepper and cook 30 seconds to 1 minute to let the flavor of the spices bloom.

Step 2Add onion mixture to slow cooker. Crush tomatoes and add to slow cooker along with the enchilada sauce, chiles, broth and water. Mix well to combine.

Step 3Add remaining ingredients and cook on low 6 hours or high for 3-4 hours.

Step 4During last 30 minutes to 1 hour, add tortilla strips to allow them to soften and combine with sauce.

Step 5Garnish soup bowls with sour cream, cheese or extra cilantro.
